More San Antonio Decaf is on the way!

We’re thrilled to have confirmed another shipment of the delicious San Antonio Decaf, due to land in late March. Since its introduction in 2024, this caffeine-free offering has become one of our most popular lines, as it’s an excellent performer across all brewing applications.

From the very early days of our Colombian sourcing, we’ve had the privilege of purchasing coffee from nearly every member of San Antonio’s Pillimué family. That’s why we’re so proud to have a decaf offering that’s a result of the strong partnerships they maintain in town and the surrounding region of Inzá, Cauca with Pergamino’s support. 

For this lot, caffeine has been carefully removed using ethyl acetate, a natural component derived from sugarcane. The process is incredibly efficient; as a result, the coffee’s structure is left practically intact, with all sugars retained. In practice, this means the original flavour profile is unchanged and beans remain dense, roasting similarly to their caffeinated counterparts.

The latest San Antonio Decaf is clean and well-structured, with great texture and intensity of flavour. Its dulce de leche sweetness is balanced by notes of stewed apple, toasted almond, and cacao nibs — making it well-suited to both filter and espresso brewing. We have also chosen to vacuum-pack this lot, which contributes to its overall quality, consistency and longevity.
